Coffee Technicians Guild Summit | Italy 2017




Dr. Marco Wellinger is a research associate in the group of Chahan Yeretzian at ZHAW (Zurich University of Applied Sciences) in Wädenswil, Switzerland. He is researching coffee flavors (chromatography, mass spectrometry and titration), espresso machine and grinder technology as well as sensory analysis of coffee (Q arabica grader). In the last three years he has worked mainly on water for coffee extraction, including authoring the “SCAE water chart” and a book chapter in “Craft and science of coffee” as well as numerous presentations on SCA(E) events. In his latest research physical and chemical quality indicators have been used to characterize different machine technologies and investigate extraction dynamics.



Mike has a degree in sound & vibration technology but never pursued this as a career. He has been in the coffee industry as a technical trainer for the last 15 years, working at BUNN and now La Marzocco. Prior to this he worked for a service company in the UK repairing all types of commercial kitchen equipment.



Simon Green has 30 years experience in the coffee industry in both HORECA and Speciality. He started his career as a technician and is currently Technical Manager EMEA for Bunn. With his passion for coffee he became SCA AST trainer covering "Introduction to Coffee & Brewing." Simon has taken several courses to enhance his coffee knowledge including cupping, and profiling of coffee for our customers around the world. Through education, participation and support we are all empowered.

Allen has extensive experience as a Product Manager in the test and measurement sector. For over 20 years he has worked in a variety of areas including telecoms test, weighing and electrical test for both leading manufacturers and distribution. Prior to this he worked in manufacturing industry gaining a wide foundation in design, maintenance and quality system disciplines. Technical qualifications in radio communications and radar engineering was supplemented with an MBA from the UK's Open University, to provide the required business skills necessary to contribute fully in the product management role.

Sergio Barbarisi is a well-known expert in water filtration dedicated to the ho.re.ca and vending markets.  Born and raised in northern Italy, he began his professional career inside the vending machine industry working for the Italian manufacturer N&W as well as for the largest vending operator, pursuing also his professional knowledge for 1 year outside of Italy working in Denmark, before specializing in water filtration systems.  He managed the start-up of the Italian subsidiary for one of the major manufacturers of water filtration Systems, after which he passed to the competition to set up once again the Italian subsidiary of the same and retains this as his current occupation as Managing Director of BWT Water+More Italia.  Deeply involved in SCA activities, he has in his many years in the market developed vast knowledge of the relationship between water, machines and finally coffee.



From a background of factory engineering with qualifications in mechanical and production engineering. Joined Whitbread in 1990 working on equipment development and maintenance covering all the Whitbread brands during this time. For the last 14 years been exclusive to Costa Coffee developing their coffee equipment on a global basis ensuring supply and service provision in each country. Development the maintenance regime in the UK and established a preventative maintenance programme to ensure compliance and reduce breakdowns.


Damian Marshall

A 14-year veteran of the coffee industry, Damian Marshall is currently a Product Development Specialist at Urnex, a worldwide leader in specialty cleaning products for coffee & espresso equipment. Damian holds degrees in Mechanical Engineering and in Innovation & Technology Management and, over the course of his career, has worked with a wide range of coffee machine manufacturers on projects related to these disciplines.

Damian is the technical advisor for the Irish Foodservice Suppliers Alliance and a committee member of the European Federation of Catering Equipment Manufacturers. He has also been the Events Manager for the SCA Irish Chapter for 10 years. Damian resides in Ireland.
